The title says it all! You can mix and match the fruit, milks and spices in this smoothie. Don’t be precious about quantities, throw it all together and it’ll be perfect!

1 x banana
1/2C nut milk (I used macadamia)
1/2C coconut milk
1/2 tsp Cinnamon
1/4 tsp Cardamom
1/4 tsp Vanilla
Chia seeds

Whiz
Enjoy!

Slow lunching in the Yarra Valley

Slow lunching in the Yarra Valley

Ok. I admit it. I’m a workaholic.

The mere thought of switching off my email and taking a weekend to myself is a difficult one!

Despite this knowledge of my somewhat unhealthy working habits, every now and again I absolutely acknowledge that it’s good to cut yourself a break.

This past weekend, I day tripped with two of my good friends to the Yarra Valley – I’m sure you’ll hear a lot about them if this blogging crusade continues. We visited the most amazing cafe – Meletos – set amongst apple orchards and boasting a brilliant menu filled with delicious choices at reasonable prices. We were greeted with impeccable service and a cosy atmosphere to settle in for the afternoon. If you’re ever in the area, I’d absolutely recommend them. Here’s their website.

If you want to see more of my day tripping foodie adventures, follow me (@erycole) on instagram

If you’ve got suggestions for where my next adventure should be to I’d love to hear from you :o)

Happy Sunday!

This is me…jumping in!

This is me…jumping in!

Such a scary adventure that I’m embarking upon…

So here goes!

1610977_10152912938416540_4602611589216899278_nHello world!
For the last 8 months I’ve been studying with the Institute of Integrative Nutrition, completing a Health Coaching course. I think most of my friends already know that I’m really interested in healthy eating and nutrition but this course has opened up a whole other realm of connectedness with relationships, career, physical activity, education and creativity.

My year at IIN is nearly over! I’m so excited to be finishing, and open to the next exciting twist that completing the course might bring. I feel like this blog may be a little insight into that journey for me. Who knows? It might end up helping someone else that’s venturing into the expansive world of blogging/education/health and wellness.

Along the way I’m hoping to share recipes from my kitchen, wellness tips, interesting reads and stacks of other blog-worthy things that will hopefully interest others as well!

Please share my posts with others that may want some healthy inspiration!
